JP Krause, Celebrity Chef, made a few amazing dishes with Squeal Black Spiced Rum including:
Squeal Jerk Chicken Bites
Take chicken thighs, marinaded in 1/3c Squeal Spiced Black Rum & jerk seasoning. Sear skin side down, then add in chili, fresh citrus and the juic from marinating and cook until done. Top with Rum soaked fresh pineapple.
Pomegranate & Squeal Braised Ribs served with Brussel Sprout Slaw
Braise ribs for 8 hours
For pomegranate juice, mix Squeal Rum, White Onion, 5 Garlic Gloves Crushed, 2 Bay Leaves, 3 TB Cornstarch Slurry.
Once braised, broil in oven for an additional 15 minutes.
Brussel Sprout Slaw
Boil and cook sprouts for 6 minuted and ice down brussle sprouts to stop the cooking. Add in seared Bacon Lardons, Poppy Seed Dressings, a splash of Squeal Rum, Salt & Pepper.
Squeal Chocolate Chip Cookie topped with Squeal Peach Salted Caramel Sauce
Take Great Grandmas secret recipe, add in 2TB of Squeal to the recipe, then top/baste another 2TB on top.
I prefer to cook in a cast iron skillet so they stay soft.
The caramel sauce is real easy as well. Cook down peaches with a cup of sugar until ‘jam like’ add in Squeal Rum and bring to a boil. Turn on medium and and pour in 1/2 cup of heavy whipping cream, then bring back t a boil stirring continuously. Take off the heat and add in a pinch of sea salt.
