BBQ Squeal Chicken & Celeriac Slaw

Squeal Chipotle BBQ Sauce

½ c ketchup

½ c brown sugar

¼ c honey

2 TB apple cider vinegar

2 TB of canned chipotle

2 tsp worcheshire sauce

1 TB fresh garlic crushed

Combine all ingredients and bring to a boil. This is a basic tomato based BBQ sauce.

When cool, take 1 cup of BBQ Sauce and stir in ¼ c. Squeal Spiced Black Rum.

BBQ Squeal Chicken

6 Pieces of Chicken, any type

Take 6 pieces of Chicken, inject sauce into meat, and toss in BBQ Sauce.

Marinate overnight to infuse flavor.

Sear in hot pan, reduce heat.

Add in ½ c water.

Cover and simmer until chicken is cooked to 165 degrees Fahrenheit.

Celeriac Slaw

1 Celery root, peeled and cut into thin strips

2 Tart apples, thin slices

2 TB chopped sage

¼ c poppyseed creamy dressing

Poppyseed Creamy Dressing

Combine apple cider vinegar, mayo, lemon juice, sugar, poppy seeds, and salt.

Mix and chill overnight.

Toss before serving as the fruit & vegetable juices will pool.
